Bombay Toast

My Cousin's Recipe

Cook Time: 15 mins
Serves: 4


  • 1 Onion
  • 1 French Bread (Baguette)
  • 4 Eggs
  • 1/2 to a Whole Stick of Butter
  • 2 Tbsp. Olive Oil
  • 2 Green Chili Peppers
  • 1/2 Tsp. Salt (to taste)


  1. Finely Chop the Onion
  2. Cut Bread into 1/2" thick Slices
  3. In a Small Bowl, Whisk Eggs
  4. Toast Bread, and Butter each side thoroughly
  5. In a Large Frying Pan, Melt Butter over Medium High Heat; Mix in Olive Oil
  6. Add Onions, Chili Pepper, and Salt; Stir till Onions have Caramelized
  7. Add Toast
  8. Add Eggs as Final Step and Turn Heat to Medium, Make Sure Eggs are Spread over the Bread; and Cook Eggs untill they are Done
  9. Remove From Heat and Serve Hot
