Ingredients
- 1 Lime
- 2 Tbsp. Ginger Garlic Paste
- 1 Chicken (Cut in 8 Pieces)
- 1 Tsp. Salt
- 1 Tbsp. Coconut Oil
- 1 Tsp. Coriander
- 1 Tsp. White Peppercorns
- 1 Stalk of Leek (Cut in 1/4" thick Slices)
Method
- In a lage bowl, Squeeze Lime Juice, Add Ginger Garlic Paste and Salt, and Mix
- Add Chicken & Mix; Marinate for 15 Minutes minimum
- In a Large Pot over Medium Heat, Add Coconut Oil and Coriander Seeds, Sautee for about 1 Minute
- Add Chicken, and Cook in Covered Pot over Medium High Heat for 5 Minutes; Stiring once or twice
- Add Leek and Turn Heat to Medium; Continue to Cook in Covered Pot for 10 Minutes
- Turn Heat to Low; Continue to Cook in Covered Pot for 5 Minutes; Chicken should be fully cooked by now
- Turn off Heat, and Serve with White Rice or Polao
