Serves: 6 to 8

Ingredients

  • 2 Tbsp. Olive Oil
  • 1 Medium Red Onion (Sliced thinly)
  • 3 Green Chilis (Sliced in Half lengthwise)
  • 1/2 Tsp. Salt
  • 1 Medium Yellow Bell Pepper (Chopped)
  • 1/2 Tsp. Turmeric
  • 2 Cups Jasmine Rice
  • 20 Sprigs of Dill (Chopped)
  • 3 Cups Water
  • 2 Tsp. Mustard Oil

Method

  1. In a Medium pot, over Medium Heat, add Olive Oil, Onions, Yellow Pepper, and Green Chilis
  2. Sautee for about 2 Minutes, then Add Salt and Turmeric, and Sautee for 1 more Minute
  3. Add Rice, and Mix
  4. Add Dill, and Sautee for a Minute
  5. Add 3 Cups of Water and turn Heat to High, Cover Pot and continue to Cook over High Heat for about 5 Minutes
  6. Turn Heat to Medium and Mix Rice; Continue to Cook for about 10 more Minutes on Medium Heat in Covered Pot, Stiring once or twice
  7. Turn Heat to Medium Low, and Continue to Cook for another 5 Minutes, Rice should be almost cooked by now
  8. Add Mustard Oil and Mix; Turn Heat to Low and Continue to Cook for 5 more Minutes in Covered Pot
  9. After 5 minutes on Low Heat, Remove from Stove and Serve with Kabab, or Beef or Goat Curry

This recipe is a variation of a Dill Rice my Boro Khala (Oldest Maternal Aunt) often makes. She usually uses dried Dill and does not put any Peppers.
