Sautee Onions over Medium Heat

Add Tomatoes

Add Ginger Garlic Paste

Add Spices

Mix Spices, and Sautee for 2 to 3 Minutes

Add Meat

Mix Beef with Spices

Cook Meat over Medium High Heat

Add Tarragon

Add Potatoes

Tarragon Beef Curry

Tarragon Beef Curry

Cook Time: 60 mins
Yields: 8 to 10

Ingredients

  • 3 Lbs. Beef (Cut in about 1" Cubes)
  • 1 Tsp. Salt
  • 2 Tbsp. Olive Oil
  • 1 Medium Onion (Thinly Sliced)
  • 3 Tomatoes (Cut in Long Pieces)
  • 1 Tsp. Turmeric
  • 6 Tbsp. Ginger Garlic Paste
  • 1 Tsp. Red Chili Powder (you can use 1/2 Tsp. if you don't want it to be too hot)
  • 1 Tsp. Paprika
  • 1-1/2 Tbsp. Cumin Coriander Spice
  • 2 Black Cardamom
  • 1 Small Stick of Cinnamon
  • 6 Cloves
  • 1/4 Tsp. Black and White Peppercorns Crushed
  • 5 Stalks of Tarragon
  • 3 Small Potatoes (Cut in 4 Pieces)

Method

  1. Wash Beef and Drain excess Water
  2. In a large Mixing Bowl, Add 1 Tsp. Salt to Beef, and Mix; Marinate for at least 1 Hour
  3. In a Large Pot over Medium Heat, Add Olive Oil, and Sautee Onions for about 1 or 2 Minutes
  4. Add Tomatoes, and Sautee for a Minute
  5. Add Ginger Garlic Paste, and Mix
  6. Add Turmeric, Chili Powder, Paprika, and Cumin Coriander Spice, and Sautee for 1 to 2 Minutes
  7. Add Beef, and Mix; Turn Heat to Medium High
  8. Add Cardamom, Cinnamon, Cloves, and Crushed Peppercorns
  9. Cover Pot and Continue to Cook over Medium High Heat for 40 Minutes, Stirring every 5 to 6 Minutes
  10. Add Tarragon, and Potatoes, and Mix; Lower Heat to Medium Low
  11. Continue to Cook over Medium Low Heat for 10 Minutes in Covered Pot, Stirring at least once
  12. Lower Heat to Low, and Cook in Covered Pot for another 10 Minutes; Beef should be fully Cooked by now
  13. Serve with White Rice, Khichuri, or Breads
