Artichoke Chicken Curry

Serves: 4 to 8


  • 1 Tbsp. Olive Oil
  • 2 Shallots (Thinly Sliced)
  • 18 Artichoke Petals
  • 1 Tbsp. Ginger Garlic Paste
  • 1 Tsp. Turmeric
  • 1/2 Tsp. Red Chili Powder
  • 1/2 Tsp. Paprika
  • 1 Whole Skinless Chicken (Cut in 8 Pieces)
  • 1 Tsp. Salt


  1. In a Medium Pot, over Medium Heat, add Olive Oil, Shallots, and Sautee for a Minute
  2. Add Artichoke Petals, and Sautee for a Minute
  3. Add Ginger Garlic Paste, Turmeric, Red Chili Powder, Paprika, and Sautee for about 2 Minutes
  4. Add Chicken, Salt, Mix, and Cook in Covered Pot for about 5 Minutes over Medium Heat
  5. Turn Heat to Medium High, and Continute to Cook with Pot Covered for about 10 to 12 Minutes; Stiring every few Minutes so Chicken Cooks evenly
  6. Turn Heat to Medium Low, and Cook for another 5 Minutes with Pot Covered
  7. Turn off Heat, and Serve with White Rice
