Rub Salt and Olive Oil on Potatoes

Baked Potatoes

Cut Baked Potatoes in Half

You will need a Melon Baller for the Next Step

Using the Melon Baller Core Out the Halved Potatoes

Place Removed Cores in a Bowl

Chop Onion

Chop Cilantro

Sautee Onions for about 1 or 2 Minutes

Add Frozen Peas to Pan

Mix and Add Black Pepper

Add Cilanto and Sautee for another Minute

Add Sauteed Onions and Peas into Bowl Containing Potato

Using a Fork (or Your Fingers), Mix Peas and Onions with Potato

Using Your Fingers, Scoop Filling into Potato Skins and Bake

Prep Time: 15 mins
Cook Time: 65 mins
Serves: 10 to 20


  • 10 Small Potatoes
  • 1/2 Tsp. Salt
  • 1/2 Tsp. Olive Oil
  • 1 Large Onion (Chopped)
  • 1 Cup Frozen or Fresh Peas
  • 12 Stalks of Cilantro (Chopped)
  • 1/2 Tsp. Freshly Ground Black Peppercorns
  • 1/2 Tsp. Olive Oil


  1. Heat Oven to 350 Degrees F
  2. Wash Potatoes, and Place on a Metal Baking Tray; Mix with 1/2 Tsp. Olive Oil and Sea Salt, and Bake for approx. 40 Minutes
  3. Remove Potatoes from Oven, and Allow to Cool
  4. Cut Potatoes in Half; Using a Melon Baller Core Out Halved Potatoes
  5. Chop Onions and Cilantro
  6. In a Medium Frying Pan, Over Medium Heat, Sautee Onions with 1/2 Tsp. Olive Oil for about 2 Minutes
  7. Add Peas, Black Pepper, and Cilanto to Pan; Sautee for 2 to 3 Minutes
  8. Turn off Heat and Add Sauteed Onions and Peas to Bowl Containing Potato, and Mix Filling
  9. Scoop Mixed Filling into Potato Skins, and Bake for 20 Minutes at 350 Degrees F
  10. Remove and Serve as Appetizer or Side Dish
