Ingredients
- 20 Large Shrimp (about 1 Lb.)
- 1 Tbsp. Ginger Garlic Paste
- 1 Tsp. Cumin Coriander Spice
- 1 Red Chili Pepper (Cut in 1/4" Pieces)
- 2 Tbsp. Coconut Oil
- 6 Cloves of Garlic (Thinly Sliced)
- 1 Bunch of Asparagus (Cut in 1-1/2" Long Pieces)
- 3 Hungarian Peppers (Cut in 1/4" Slices)
- 2 Tsp. Sea Salt
- 1 Large Red Onion (Cut in 1/4" Thick Slices)
- 12 Stalks of Scallions (Cut in 1-1/2" Long Pieces)
Method
- In a Medium Bowl, Marinate Shrimp with Ginger Garlic Paste, Red Chili Pepper, and Cumin Coriander Spice and Set aside
- In a Large Frying Pan or Wok, Add Coconut Oil over High Heat, and Add Garlic
- Add Asparagus to Pan and Sautee for a Minute; Add Hungarian Peppers and Sautee for Another Minute
- Add Red Onions and Sautee for a Minute; Add Shrimp and Sautee for about 5 Minutes
- Add Scallions, Mix, and Continue to Cook over High heat for Another 2 Minutes; Turn Heat Off and Serve with White Rice
